THIS summer is a killer in more ways than one. The heat is on and one may if inclined go on a fully liquid and light diet to stay cool and light. As usual the Taj Group of Hotels’ kitchens have been busy with Chef Abhishek Dhyani of the Cidade De Goa and Chef Nitin Mathur of the Taj Santacruz coming up with special summer smoothies featuring the ingredients of the good life of health and immunity boosting to keep even the novel corona virus at bay!

RECIPES COURTESY CHEF NITIN MATHUR
GRANOLA & FRUIT SMOOTHIE
1 banana sliced, 1 apple medium (Peeled & Diced), 1/3 cup plain Greek yogurt, 1/4 teaspoon cinnamon powder, 1 tbsp maple syrup or honey, 1 tbsp flaxseed powder,
1/2 cup granola, 1/4 cup ice
Crush granola coarsely in the blender
Add Greek yogurt, soy milk, and honey to blend it well
Add rest of the ingredients and blend until smooth
Voila! Granola smoothie is ready
AVOCADO SUPER SMOOTHIE
1/2 cup of almond & walnuts, 1 ½ – 2 cups of spinach leaves chopped, 1 firm ripe avocado,
1 ½ cups almond milk, 1 tbsp of liquid apple syrup or honey, 1tbsp sunflower seeds,
1tbsp pumpkin seeds
Add mixed nuts (almond & Walnut), sunflower seeds and pumpkin seeds in blender and blend it well
Add spinach, avocado & soya milk in a blender. Blend until smooth
Add liquid apple syrup or honey and blend it for another 10 seconds.
Pour into glasses and serve.
PEANUT BUTTER AND HONEY OAT SMOOTHIE
2 cups of rolled oats (pan roasted), ½ yogurt, 1 cup almond milk, 1 large banana, 3tbsp. peanut butter, 2 tablespoons honey, 1tbsp flaxseed powder
Place oats in blender and process
Pour milk into blender and allow processed oats to soften in milk for about 2-3 minutes
Add remaining ingredients and blend until smooth. Serve immediately
1/4 = 0.25 cup oats, 1 teaspoon lemon juice, 1/2 cup coconut milk, 1/2 cup fresh mango,
1/3 cup plain yogurt, 1 tablespoon honey, 1tbsp sunflower seeds, 1/2 cup ice
Dry roast oats in a pan and let it cool
Add pan roasted oats in a blender and blend it well till the texture appears powdered
Place rest of the ingredients in a blender and mix until smooth
MANGO YOGURT SMOOTHIE
1 mango peeled and diced, 1 cup yogurt, 1 cup ice, ½ tsp cinnamon powder, 1 tsp lemon juice, 1tbsp pumpkin seeds
Add yogurt, lime juice and cinnamon powder in blender and blend it well
Add rest of the ingredients in your blender and blend for 1-2 minute or until the mixture is smooth.
Divide between two cups & serve immediately.
